WHere is a simplified version of a drink featured on our latest menu. It's a party-sized pre-mixed which is bursting with tastes associated with Christmas time, which makes it excellent for hosting a festive gathering. Save the extra citrus syrup you can use for breakfast cocktails, desserts, or to make more rounds of the drink.
Bikini Recipe
Makes enough for 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Combine the listed ingredients in a saucepan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the stove and let it to cool down fully. Transfer to a clean bottle, cap it and store in the fridge, where it will keep for around one month.
To make Cocktail Base: Mix all the liquid ingredients in a big jug, leave to sit for an hour, then filter it preferably using muslin, so it's completely strained.
When ready to serve: Pour 85ml of your batch mix into a stirring glass filled with ice, and agitate lightly for a minute until cold. Strain into an frosted cocktail glass or a similar vessel, decorate with a few cranberries adding the final touch with a light spray of mandarin oil above the glass.
